Al Woods makes maple syrup up in Vermont.  He is most famous for his smoky maple syrup, but also ages syrup in old bourbon or rum barrels.  We use the syrup here as a basis for marinades for salmon and also in our spicy peanut mixes.  Other people use it in cocktail mixers.  But you can just pour it on pancakes.
